You don’t need a lot of fancy hardware in your kitchen, but there are a few things that you can get fairly inexpensively that will make your life a lot easier.
-1 large chef’s knife
-1 pearing knife
-several plastic cutting boards (to avoid cross contamination!)
- An immersible blender. Much more portable, and easier to clean than a regular blender.
-2 good non-stick pans. 1 small, 1 large.
-1 large pot, for boiling water, etc.
-Salt and pepper grinders. Avoid the powdered, pre ground stuff.

In a hot pan, add:
-a splash of olive oil
-sliced garlic
-diced onion
-2 tablespoons of your favourite curry paste. (I prefer green!)
Toss in your choice of protein, and cook until done.
Add snap peas, thinly sliced carrot, bell pepper, or your own choice of vegetable.
Dump in:
-1 cup of broth
-1 can of cocunut milk
-a splash of soy sauce
-the juice and zest of a lime
-hot sauce, to taste
-and if you have them, powdered almonds (for texture.)
Simmer until the curry reaches your desired consistancy, and add fresh cilantro, and sliced grape tomatoes.
Serve!

Chop fine, and mix in a large bowl:
3 large tomatoes
1 small sweet onion
1 green pepper
1 jalapeño, seeds removed
2 cloves of garlic
The juice and zest of 1 lime
a drizzle of honey
a splash of olive oil
Serve with tortilla chips!

Basic Hummus
1 can chick peas, drained
2 tablespoons of tahini paste
1 clove of garlic, minced
3 tablespoons of olive oil
salt, and pepper
The juice of half a lemon
Blend until smooth, and serve with pita!
Mushroom Spread
-Substitute Chickpeas for 10 large brown mushrooms, and 4 cloves of garlic. Roast them in the oven until the mushrooms are soft, and the garlic is sweet.
-Substitute lemon juice with a couple of tablespoons of red wine vinegar.
Black Bean Spread
-Substitute chickpeas for black beans.
-Caramelize half an onion, and add to the mixture.
Avocado Hummus
-Add 1 avocado to the mixture.
-Replace lemon juice with lime juice.

I am no chef. I’ve got no real training. But I do love to cook.
I dislike following recipes, because it takes all the fun out of the process.
I’m also a student - which means I’m rather poor. So you won’t find anything too fancy on this blog. What you will find though, will be delicious!
